Alpine Cheese Dairies

Alpkäserei Gerschnialp

Every summer since 1975 Sälmi Töngi has been turning milk into cheese in his cheese dairy at Gerschnialp. 300,000 kg of cow’s milk and 2 tons of goat’s milk are made into rounds of cheese and stored in cellars until they are ripe enough to take to market.

 

Individual tours between the hours of 5:00 a.m. to 4:00 p.m. can be arranged.

 

Alpkäserei Stäfeli

Nestled at the far end of the Engelberg valley (in the canton of Uri) at an altitude of 1393 m you’ll find the Stäfeli Alp. Hikers and wanderers going from Engelberg to Uri via the Surenen Pass have often stopped here to rest. Many come here just to enjoy the beautiful scenery and a simple but satisfying afternoon meal. One of the tastiest pleasures is the Stäfeli cheese, produced here for generations.

 

Alpkäserei Untertrübsee

Thomas Scheuber has been making cheese in his modern facilities at an altitude of 1300 m since 1996. Within 4 months’ time he turns 300,000 kg of milk into Sbrinz cheese, two others types of Alpine cheese, melting cheese, cheese with herbs, cream butter and cottage cheese. The cheesemaker, his wife Andrea, and daughter Franziska live up on then Untertrübsee Alp, carrying on the fourth generation of Scheuber Family tradition.
